Not every house project needs the whole structure gone, and the two jobs price very differently.

A partial teardown usually makes sense when you are keeping the foundation and part of the frame, adding a storey or a rear addition, gutting back to studs for a full renovation, or a zoning rule makes the existing footprint worth protecting.
One thing that surprises people: partial is not automatically cheaper. It is slower and more of it is done by hand, because everything you keep has to be protected and every cut has to be planned. What it does save is foundation work and, in some cases, a permit path.
